Omelets in a Bag

Get a ziploc sandwich bag (cheap ones work too) and label them with the names of the people eating. Put two eggs (one for smaller people). Add any fixin's like cheese, peppers, salt, pepper, mushrooms, onions, etc. Zip up the bag and let the kids smash the eggs together. On the stove, boil water in a large stock pot. Put the bags in the water (as many bags as will fit in your pot). Boil for 13 minutes. Open the bag and place the eggs on a plate.

Wild Rice Scrambled Eggs

12 eggs (beat with 1/3 cup milk)
1 cup pre-cooked long-grain wild rice (follow cooking instructions on wild rice package)
6 large fresh mushrooms, sliced
1 small green pepper, diced
1/2 cup white onion, minced
1 large fresh tomato, diced
6 slices ham, diced, or two chicken breasts, cooked and diced
1 cup shredded cheese
Season to taste
Parsley
Scramble eggs in large deep frying pan (coat with cooking spray) until "almost" done.
Take off burner and stir in wild rice, mushrooms, green pepper, onion, ham and seasonings. Mix well. Sprinkle cheese on top and garnish with diced tomatoes and parsley.
Put uncovered frying pan in oven and bake for 15 minutes. Eggs will finish cooking. Let sit for five minutes to set, then cut into six pie shaped portions and serve hot.

1 egg
1 1/4 cup buttermilk
1/4 cup granulated sugar
1 heaping teaspoon baking powder
1 teaspoon baking soda
1/4 cup cooking oil
pinch of salt
Preheat skillet over medium heat. Spray skillet with nonstick spray. Using a blender or mixer, combine all remaining ingredients until smooth. Ladle approximately 1/3 cup batter onto the hot skillet, forming 5-inch circles. When the edges appear to harden, after a minute or two, flip the pancakes. They should be golden brown. Cook pancakes on other side for the same amount of time. Makes 8-10 pancakes.

2/3 cup sugar

2 eggs, slightly beaten
8 cups all-purpose flour
*Note: This recipe uses about 5 sticks (2 1/2 c.) butter total.*
Mix warm water, yeast, and 1 tsp sugar and set aside. Mix milk, 2/3 c sugar, butter, salt, and eggs; stir well and add to yeast mixture. Add half the flour and beat until smooth. Add enough remaining flour to make dough slightly stiff. Dough will be sticky. Knead for 5-10 min. Place in well-greased glass or plastic bowl, cover with plastic wrap, and let rise in a warm place free of drafts for about 1 ½ hours or until doubled in bulk.

Place rolls close together in pans and let rise again until dough is doubled in bulk, about 45 min. Bake at 350 F for 20-30 min or until rolls are browned. Cool slightly.

2 T butter
1/2 C diced onions
1-2 garlic cloves
1/2 lb. fresh mushrooms

1 can cream of mushroom soup
1 T soy sauce
1 T Worcestershire sauce
1 C sour cream
8 oz. wide egg noodles
Melt oil and butter in pan. Add beef to pan. When beef is browned, remove it from the pan.
Add onions, garlic, mushrooms and sauté until onions are glazed and clear.
Add soups, soy sauce, Worcestershire sauce while stirring to combine.
Add sour cream and stir. Add browned beef. Baked covered in 275 degree oven 2-3 hrs. or cook in crock pot on low.
Serve over wide cooked egg noodles.

24 frozen rolls
1 small package butterscotch cook n' serve pudding (NOT INSTANT)
1/2 cup brown sugar
1 cube butter
1 tsp cinnamon
4 oz. chopped walnuts or pecans (optional)
Place half of the nuts, if using, into a greased bundt pan. Place frozen rolls in pan, then pour pudding powder evenly over the rolls. Melt butter and stir the brown sugar into the melted butter. Pour mixture evenly over rolls. Sprinkle with cinnamon and remaining nuts, if using. Cover with a towel and let rise for 8 hours or refrigerate overnight. If refrigerated, set pan out at room temperature for 30-60 minutes before baking. Bake at 350 for 20-25 min. If the top of the rolls start to burn before it is done cooking, cover the top with a piece of tin foil.

Cheesy Volcano Meatballs

1 lb. lean ground beef, pork, or turkey
6 Ritz Crackers, finely crushed
1/4 cup Parmesan Cheese
1/4 cup spaghetti sauce, divided
12 cheddar cheese cubes
Heat oven to 400ºF.
Mix meat, cracker crumbs, Parmesan and 1/4 cup spaghetti sauce. Shape into 12 meatballs, using about 2 Tbsp. meat mixture for each.
Place, 2 inches apart, in shallow baking pan sprayed with cooking spray. Press 1 cheese cube deeply into center of each meatball.
Bake 14 min. or until meatballs are done (160ºF). Serve with spaghetti.

4 green onions, sliced
1/2 cup chopped dry roasted peanuts, optional
Cook spaghetti or noodles as directed on package, adding snap peas and red pepper to the cooking water for the last 2 min. of the spaghetti cooking time.

Beef Stir-fry with Noodles

12 ounces boneless beef sirloin steak, trimmed of fat
2 cups fresh pea pods
3 Tbsp reduced-sodium soy sauce
2 Tbsp rice vinegar
4 ounces Oriental-style noodles (chukka soba) or linguine
2 cloves garlic, minced
2 cups thinly sliced carrots
6 green onions cut on bias about ½ inch
2 tsp cooking oil
Partially freeze meat about 30 minutes. Thinly slice meat across the grain into bite-size pieces. Set aside. Remove ends from pea pods; halve pea pods diagonally. For sauce, in a small mixing bowl stir together soy sauce and rice vinegar and set aside.
Cook noodles according to package. Drain. Rinse with cold water. Drain and set aside.
Spray an unheated, large skillet with nonstick coating. Preheat over medium-high heat. Stir-fry garlic in skillet for 15 seconds. Add pea pods, carrots, and green onions. Stir-fry for 2-3 minutes or until tender-crisp. Remove vegetables from pan.
Pour oil into hot pan. If necessary, add more oil during cooking. Add beef to pan and stir-fry for 2-3 minutes or until desired doneness. Push beef from center of pan. Add sauce to center of pan. Heat grill. Remove chicken from marinade; reserve marinade. Cover and grill chicken 4-6 inches from medium heat for 15-20 minutes, brushing with marinade and turning occasionally, until juice of chicken is no longer pink when center of thickest parts are cut.
Heat remaining marinade to boiling; boil 1 minute, stirring occasionally. Serve with chicken.
Variation: Substitute apricot jam and balsamic vinegar.

dash garlic salt
1/4 c. water
1 can sliced green chilies
3/4 can enchilada sauce (I use Old El Paso brand, medium spiciness but any will work)
1 cup brown sugar
tortillas
Put the pork in a heavy duty ziploc bag to marinate. Add about a can and a half of coke and about 1/4 cup of brown sugar. Marinate for a few hours or overnight.
Drain marinade and put pork, 1/2 can of coke, water, and garlic salt in crock pot on high for about 3-4 hours (or until it shreds easily, but don't let it get TOO dry) or on low for 8 hours. Remove pork from crock pot and drain any liquid left in the pot. Shred pork.
In a food processor or blender, blend 1/2 can Coke, chilies, enchilada sauce and remaining brown sugar (about a cup, you can add a little more or less to taste..). If it looks too thick, add more Coke little by little.
Put shredded pork and sauce in crock pot and cook on low for 2 hours. Serve with tortillas.

Cover and let cook on low to medium-low until rice is done, about 25-30 minutes. Fluff with a fork before serving.

2 1/2 cups all-purpose flour
1 cup granulated sugar
1/4 cup poppy seed
1 1/4 cups milk
1/3 cup vegetable oil
3 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla
1 egg
powdered sugar – optional
Heat oven to 350. Grease bottom only of 9x5x3 inch loaf pan. Mix all ingredients except powdered sugar in large bowl; beat 30 seconds with spoon. Pour into pan.
Bake 1 hour 10 minutes to 1 hour 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cook completely, about 2 hours. Sprinkle with powdered sugar if desired.

1-2 lbs chicken breasts
1/2 bottle barbeque sauce
1 can crushed pineapple.
Layer the pan with chicken breasts then slather it with BBQ sauce and top it with crushed pineapple, Cook on 350 for about 20ish minutes or until the chicken is cooked thoroughly. Serve on top of rice.

Fantastic Meatballs

1 1/2 lbs ground beef
1 extra large egg
about 1/8 c. bread crumbs (maybe a little more if you like them)
half a packet onion soup mix
2 Tbsp ketchup
Mix all ingredients together and then roll into balls. Cook at 350 for about 15-20 min or until cooked all the way through.
