Light Summer Salad

from Mom

3 Tbsp red wine vinegar
2 Tbsp olive oil
3 tsp garlic, minced
1 tsp salt
1/8 tsp pepper
2 tsp parsley
8 ounces angel hair pasta, cooked and drained
6 ounces tomatoes, seeded and chopped
4 ounces shredded mozzarella cheese
1 tsp basil

To prepare vinaigrette, combine vinegar, oil, garlic, salt and pepper in a small bowl. Mix well. Chill until ready to serve. When ready to serve, combine cooked pasta, tomatoes, basil, and parsley. Pour vinaigrette over pasta mixture until well coated.
