Ratatouille Pie

1 cup chopped zucchini
1 cup chopped eggplant
1/2 cup chopped tomato
1/2 cup chopped green pepper
3/4 tsp salt
1/8 tsp freshly ground pepper
1/4 tsp basil
1/2 tsp thyme
1 cup shredded Monterey Jack or other cheese
1/4 cup sour cream
3/4 cup Bisquick
1/4 cup chopped onion
2 medium cloves garlic
1/4 cup butter

Heat oven to 400° F. Grease 10" pie plate.

Cook veggies in skillet on medium heat, stirring 5-10 minutes. Stir in seasonings. Spread in pie plate. Sprinkle with cheese.

Beat remaining ingredients. Pour into pie plate.

Bake until knife inserted in center comes out clean (30-35 minutes).

Let stand 5 minutes before slicing.
